The first time I made these
Light and fluffy, these pancakes ar great on their own. However, sliced bananas, blueberries, chocolate chips, and chopped nuts also pair well with the pancakes.
Apples are thinly sliced and lightly sprinkled with stevia mixed with cinnamon!
INGREDIENTS:
2 Bananas
2 Eggs
1 tsp Vanilla
1 tsp Baking Powder
1/4 tsp Cinnamon
DIRECTIONS:
Put all ingredients in a food processor and blend well. Use a 1/8 cup for measuring batter on a griddle prepared with cooking spray. Cook pancakes 2-3 minutes on one side and flip – then cook for another 1-2 minutes.
In a small bowl mix together stevia (I use Truvia) and cinnamon – you can also use the brown sugar blends.
I made some for my husband with dark chocolate chips and a dollop of whipped cream! He loved them!
